Cooking, Cooking, and more Cooking

It has been a short while since I have posted.  I guess that is because life has become pretty "normal" and "routine" around here.  One of the aspects of life in Saudi that I have had to adjust to is cooking.  I cooked in the States but no where near as much as I have now.  As I mentioned in a previous post, I used to have about 5-10 recipes that I would make and just rotate them.  With all the cooking here I have had to become more adventurous.  I have started photo-journaling some of my adventures in cooking.  Also, I must send a quick shout out to my wonderful sis-in-law Jackie for giving me the greatest cookbook- "The Pioneer Woman".  It is fantastic.  You should check it out.

Here are my recent adventures:
Meatballs:  I made one set with a BBQ flare and one with an Italian flavor

Sea Salt crust for Beef Tenderloin

Beef Tenderloin (Brazilian Beef) wrapped in the crust
My first attempt at friend chicken
Chicken turned out great! Along with some twice baked potatoes
My first attempt at an Oreo crusted Cheesecake.  I usually use Graham crackers but I couldn't find them here.  The cheesecake was SOO good but I prefer the graham cracker crust.
On a random note that has nothing to do with cooking.... We leave for our Kenyan Safari on Thursday morning! (that would be Wednesday night in the States)  We will be gone for 2 weeks. Please be praying for safe travels and a great trip.  I hope to get to update sometime during the trip.
